Cherry Vanilla Yogurt Poundcake: revisiting an older post


I'm sure that some of you remember my obsession from this past spring and summer. Some of you may not, but guess what? It's still an ongoing obsession. I can't help it! The combination of raspberry and lime is irresistible to me! It's always popping up to rear it's tasty head and I go off on these tangents every once in a while. As a winner of one of the Royal Foodie Jousts, I got to pick the three ingredients for the next one, and guess what they were? Click here to see, lol. But let's just say it was like having my own minions creating recipes to feed my obsession. How cool is that??

This pound cake is from a recipe I found years ago on a yogurt container. Easy, not too bad for you, and so good! And like any pound cake, it gets better every day. This one I just made lasted three days. The first piece was delicious. the last piece, even better.

It's a not-bad-for-you pound cake because it doesn't use the traditional one pound of butter. Just 1/2 cup! Because you add moisture with the yogurt, you don't need all that butter. And it's still moist and tender.



I used the same recipe from this previous post, but used vanilla yogurt, frozen cherries (about 1 1/2 cups after chopping) that I quartered because they were large, 1 tsp almond extract, and no zest. But truth be told, I *almost* made it cherry lime with some lime zest. I'm glad I left it out, because cherry vanilla was a winning combination.

  4. you know I still cannot for the life of me get that damn snow working on my blog? by the time I get it working it will be spring. maybe by then you'll have a new theme for me to steal. LOL

  6. This looks really good. I was thinking of you today when I took a piece of chocolate zucchini bread out of the freezer to have with coffee. It's almost gone, so now I'll have to try this.

  7. I have not had good results with traditional pound cake recipes. They always turn out too greasy. But I will certainly try this one, it sounds great. :)

  8. i love cherries, but after selecting a bag from the grocery store willy-nilly and ending up paying $15 for them, i've refrained from buying them for awhile. gorgeous, slightly healthy yogurt cake--can it still be called a pound cake? :)

  9. That looks great, Elle. I like that the calorie and fat count is lowered. I think all of us are regretting our holiday binges - at least I am.

    You put one over on me with the joust ingredients. I was posting a comment in the thread for February about raspberries, lime, and almonds when I saw a cauliflower dish on the previous post! wups! :)

  14. Ooooooh yummy! I think I am going to make this this week, but perhaps with raspberry vanilla (no frozen cherries here, and the fresh ones are 13 euro a kilo! ack!). MUAC!

  15. i remember making a lemon blueberry yoghurt cake from Alice Medrich and it was just divine. Definitely like yoghurt-based cakes as the texture is very nice. This looks gorgeous. i think i need a slice!

  22. Hi, Elole, I just left a comment on your "original" pound cake page- it took me over 6 moths to find your blog again and tell you how great this recipe is! And I've been playing with different fruit ever since I started making this cake- it's so hard to make a mistake- this recipe works with everything. Dried apricots with crushed walnuts and apricot yogurt are my so far favourite combination. Great recipe, thans again!
